  • 200g red lentils, rinsed
  • 1 × 400g tin of chickpeas, drained and rinsed
  • 1 large onion, finely diced
  • 3 garlic cloves, minced
  • 2cm piece of fresh ginger, grated
  • 1 tbsp coconut oil
  • 1.5 tsp ground turmeric
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • 1 × 400g tin of chopped tomatoes
  • 700ml vegetable stock
  • 150g baby spinach
  • Juice of ½ lemon
  • Salt to taste
  • To serve: brown rice or naan, plain coconut yoghurt, fresh coriander

Method

    Heat the coconut oil in a large pot over medium heat. Sauté the onion for 7–8 minutes until deeply golden — take your time here, it builds the base flavour.

    Add the garlic and ginger. Cook for 1–2 minutes, stirring.

    Add all the spices and stir for 30 seconds until fragrant.

    Pour in the chopped tomatoes and cook for 3 minutes, stirring, until the tomatoes have reduced slightly.

    Add the rinsed lentils and stock. Bring to a boil, then reduce to a steady simmer. Cook for 20 minutes, stirring occasionally, until the lentils are completely soft and the dhal is thick.

    Stir in the chickpeas and simmer for a further 5 minutes.

    Add the spinach and stir until wilted. Season with lemon juice and salt.

    Serve over brown rice or with naan. Top with coconut yoghurt and fresh coriander.
