- 250g full-fat cottage cheese
- 2 large eggs
- 60g rolled oats (certified gluten-free if needed)
- 1 tsp vanilla extract
- ½ tsp baking powder
- Pinch of fine sea salt
- 1 tsp coconut oil or butter, for cooking
- To serve: fresh berries, a drizzle of honey, or sugar-free maple syrup

Blend the cottage cheese, eggs, oats, vanilla extract, baking powder, and salt in a blender or food processor for 30 seconds until completely smooth. Let the batter rest for 5 minutes — this helps the oats absorb and gives you a fluffier result.

Heat a non-stick frying pan over a medium-low heat. Add a little coconut oil or butter and swirl to coat.

Pour roughly 3 tablespoons of batter per pancake into the pan. Cook for 2–3 minutes until small bubbles form on the surface and the edges look set.

Flip carefully and cook for a further 1–2 minutes until golden underneath. Repeat with the remaining batter.
