  • 4 large eggs
  • 200g baby spinach
  • 80g feta cheese, crumbled
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • ½ tsp dried oregano
  • Pinch of nutmeg
  • Salt and freshly ground black pepper
  • Chilli flakes to serve (optional)

Method

    Preheat your oven to 190°C / 170°C fan / Gas 5.

    Heat the olive oil in a small oven-safe frying pan or skillet over medium heat. Sauté the onion for 4–5 minutes until softened. Add the garlic and cook for a further minute.

    Add the spinach in handfuls, stirring until completely wilted. Season with oregano, nutmeg, salt, and pepper.

    Spread the spinach mixture evenly in the pan. Make 4 wells in the greens and crack an egg into each one.

    Scatter the crumbled feta over everything.

    Transfer to the oven and bake for 10–12 minutes, until the whites are set but the yolks are still slightly wobbly. Serve straight from the pan with chilli flakes if using.
