  • 250g cooked chicken breast, shredded
  • 120g full-fat Greek yoghurt
  • 1 tsp mild curry powder
  • 1 tsp mango chutney
  • 1 celery stick, finely diced
  • 2 spring onions, sliced
  • Small handful of coriander, chopped
  • 40g baby spinach or rocket
  • Salt and black pepper

Method

    Bake the potatoes at 200°C / 180°C fan for 50–55 minutes until crisp outside and soft in the middle.

    Mix the chicken with the Greek yoghurt, curry powder, mango chutney, celery, spring onions, coriander, salt, and pepper.

    Split the baked potatoes and fluff the middle with a fork.

    Pile in the spinach or rocket, then spoon over the coronation chicken mixture and serve straight away.
