- 4 chicken thighs (bone-in, skin-on or boneless)
- 1 medium cauliflower, cut into florets
- 3 tbsp olive oil
- 1.5 tsp ground cumin
- 1 tsp smoked paprika
- ½ tsp ground coriander
- Salt and black pepper
- For the tahini sauce: 3 tbsp tahini, 2 tbsp lemon juice, 1 garlic clove (minced), 3–4 tbsp water
- Handful of flat-leaf parsley or coriander
- Lemon wedges to serve

Preheat oven to 200°C / 180°C fan. Toss the cauliflower florets with 2 tbsp olive oil, half the cumin, half the paprika, salt, and pepper. Spread on a large baking tray and roast for 30–35 minutes, turning halfway, until golden and caramelised.

Meanwhile, mix the remaining cumin, paprika, and coriander with 1 tbsp olive oil. Score the chicken thighs a few times and rub the spice mixture all over.

Heat an oven-proof griddle pan or frying pan over high heat. Sear the chicken thighs skin-side down for 4–5 minutes until deeply golden. Flip and cook for 3 more minutes.

Transfer to the oven (or add to the tray with cauliflower) and bake for 20–25 minutes until the juices run clear.

Whisk together all tahini sauce ingredients until smooth and pourable. Add more water if needed.

Serve the chicken and cauliflower with the tahini sauce drizzled over, fresh herbs, and lemon wedges.
