- 600g boneless chicken thighs
- 1 medium cauliflower, cut into florets
- 1 × 400g tin of chickpeas, drained and rinsed
- 1 large red onion, cut into wedges
- 2 tbsp rose harissa or harissa paste
- 2 tbsp olive oil
- 1 tsp ground cumin
- Juice of 1 lemon
- 150g full-fat Greek yoghurt
- Small handful of mint or coriander
- Salt and black pepper
Method

Preheat the oven to 210°C / 190°C fan.

Mix the harissa, olive oil, cumin, half the lemon juice, salt, and pepper. Toss the chicken, cauliflower, chickpeas, and red onion in the mixture on a large tray.

Roast for 30–35 minutes, turning once, until the chicken is cooked through and the cauliflower has caramelised edges.

Stir the remaining lemon juice into the Greek yoghurt.

Serve the traybake with the lemon yoghurt and fresh mint or coriander over the top.
