- 300g red lentils, rinsed
- 1 large onion, finely diced
- 3 garlic cloves, minced
- 2cm piece of fresh ginger, grated
- 1 tbsp coconut oil
- 2 tsp ground turmeric
- 2 tsp ground cumin
- 1 tsp ground coriander
- 1 tsp garam masala
- ½ tsp chilli powder (adjust to taste)
- 1 × 400g tin of chopped tomatoes
- 1 × 400ml tin of light coconut milk
- 600ml vegetable stock
- 150g baby spinach
- Juice of ½ lemon
- Salt to taste
- Fresh coriander to serve
- Brown rice to serve
Method

Heat the coconut oil in a large, heavy-based pan over medium heat. Sauté the onion for 6–7 minutes until soft and beginning to colour.

Add the garlic and ginger and cook for 1–2 minutes, stirring constantly.

Stir in all the spices and cook for 30 seconds until fragrant.

Pour in the chopped tomatoes and cook for 3 minutes, stirring, until slightly reduced.

Add the rinsed lentils, coconut milk, and stock. Bring to a boil, then reduce to a steady simmer. Cook for 25–30 minutes, stirring occasionally, until the lentils are completely soft and the curry is thick.

Stir in the spinach and cook for 2 minutes until wilted. Season with lemon juice and salt.

Serve over brown rice with fresh coriander.
