- 2 red peppers, halved and deseeded
- 1 yellow pepper, halved and deseeded
- 200g red lentils, rinsed
- 1 large onion, diced
- 3 garlic cloves, minced
- 1 tbsp olive oil, plus extra for peppers
- 1 tsp ground cumin
- 1 tsp ground turmeric
- ½ tsp smoked paprika
- 400g tin of chopped tomatoes
- 1 litre vegetable stock (low-sodium)
- Juice of ½ lemon
- Salt and freshly ground black pepper
- Fresh coriander or flat-leaf parsley to serve

Preheat the oven to 200°C / 180°C fan. Place the peppers cut-side down on a lined baking tray, drizzle with olive oil, and roast for 20 minutes until charred and soft. Set aside to cool slightly, then peel off the skins.

While the peppers roast, heat a tablespoon of olive oil in a large saucepan over medium heat. Sauté the onion for 5 minutes until softened. Add the garlic and cook for another minute.

Stir in the cumin, turmeric, and smoked paprika and cook for 30 seconds until fragrant.

Add the lentils, chopped tomatoes, and stock. Bring to a boil, then reduce heat and simmer for 20 minutes until the lentils are completely soft.

Add the roasted peppers to the pan. Use a stick blender to blend until smooth (or leave some texture if you prefer). If it's too thick, add a little more water.

Season with lemon juice, salt, and pepper. Serve with fresh herbs and warm bread or gluten-free crackers.
