  • 300g turkey mince (lean)
  • 150g rice noodles or soba noodles
  • 2 tbsp sesame oil
  • 3 garlic cloves, minced
  • 2cm piece of fresh ginger, grated
  • 1 red pepper, thinly sliced
  • 1 large carrot, julienned
  • 200g tenderstem broccoli, cut into small pieces
  • 80g beansprouts
  • 3 tbsp low-sodium soy sauce or tamari
  • 1 tbsp rice wine vinegar
  • 1 tsp honey
  • 1 tsp sesame seeds
  • 2 spring onions, sliced
  • Chilli flakes (optional)

Method

    Cook the noodles according to packet instructions. Drain, toss with a little sesame oil, and set aside.

    Heat the sesame oil in a large wok or frying pan over high heat. Add the turkey mince and cook, breaking it up, for 4–5 minutes until browned.

    Push the turkey to the side. Add the garlic and ginger to the centre of the pan and cook for 30 seconds.

    Add the red pepper, carrot, and broccoli. Stir-fry for 3–4 minutes over high heat, keeping everything moving.

    Mix together the soy sauce, rice wine vinegar, and honey. Pour over the pan and toss everything together.

    Add the beansprouts and cooked noodles. Toss well and heat through for 1–2 minutes.

    Serve topped with sesame seeds, spring onions, and chilli flakes if using.
