  • 4 large red or yellow peppers
  • 300g turkey mince
  • 1 courgette, finely diced
  • 1 small red onion, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 × 400g tin of chopped tomatoes
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Small handful of flat-leaf parsley
  • Salt and black pepper
  • 30g Parmesan or dairy-free alternative, grated (optional)

Method

    Preheat the oven to 190°C / 170°C fan. Slice the tops off the peppers, remove the seeds, and stand them upright in a roasting dish.

    Heat the olive oil in a frying pan. Cook the onion for 4 minutes, add the garlic for 1 minute, then brown the turkey mince for 5–6 minutes.

    Stir in the courgette, chopped tomatoes, oregano, paprika, salt, and pepper. Simmer for 5 minutes until slightly thickened.

    Fill each pepper with the turkey mixture. Add a splash of water to the dish, cover with foil, and bake for 25 minutes.

    Remove the foil, add the Parmesan if using, and bake for a further 10 minutes until the peppers are tender and the tops are golden.
