  • 500g turkey mince
  • 1 large onion, finely diced
  • 3 garlic cloves, minced
  • 2cm piece of fresh ginger, grated
  • 2 tbsp coconut oil or rapeseed oil
  • 2 tsp ground turmeric
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp garam masala
  • ½ tsp chilli powder
  • 1 × 400g tin of chopped tomatoes
  • 1 × 400ml tin of light coconut milk
  • 1 large courgette, diced
  • 1 red pepper, diced
  • 100g baby spinach
  • Fresh coriander to serve
  • Brown rice or cauliflower rice to serve

Method

    Heat the oil in a large pan over medium heat. Cook the onion for 6–7 minutes until soft, then add the garlic and ginger for 1 minute.

    Stir in the spices and cook for 30 seconds until fragrant.

    Add the turkey mince and cook for 5–6 minutes, breaking it up until browned all over.

    Pour in the chopped tomatoes and coconut milk, then add the courgette and red pepper. Simmer uncovered for 15 minutes until the sauce thickens.

    Stir in the spinach to wilt, then serve with coriander and brown rice or cauliflower rice.
